Which wines are suitable for ageing?

4

Our wines are crafted for concentration and longevity. The reds benefit from bottle ageing, while our whites also offer ageing potential, supported by their acidity and structure. Over time, they develop greater complexity and distinctive mature aromas.

9 Daughters Malagouzia is the exception, best enjoyed young for its fresh floral and citrus character.

What is an orange wine, and what makes Meta different?

5

Orange wine is made from white grapes fermented with their skins, as in red winemaking. Meta takes this approach further: Assyrtiko undergoes skin-contact fermentation and controlled oxidation in small glass amphorae.

The result is a concentrated white wine with tannic structure, finesse and subtle aromas, at times recalling sherry. Its savoury character complements contemporary gastronomy, particularly fermented foods and cooking rooted in traditional methods.

How is Sweet Wishes made?

Sweet Wishes draws on a technique with roots in Byzantine winemaking. Rather than drying harvested grapes in the sun, we twist and bruise the stems of Assyrtiko bunches to restrict water flow. The grapes remain attached to the vine for 7–12 days, continuing to ripen as their sugars and aromas concentrate.

Skin-contact fermentation, followed by continued fermentation in acacia barrels, creates a sweet wine with vibrant acidity and notes of orange and apricot. With ageing, waxy notes and hints of linden blossom add further complexity.
